Feeding a crowd every day for lunch comes with certain challenges. Finding foods they will all eat, something that won’t take too terribly long in the kitchen, and something that won’t break the bank are all hard to come to an agreement with each other. One day I decided to try something new with a corn bread mix I had and some hot dogs. My kids loved it and it did not take long, nor was it an expensive meal. Winner!
The recipe for this is so super hard…(cue the sarcastic eye roll at my attempt at humor). I used one box of gluten free cornbread mix and used 3 hot dogs from the gluten free organic hot dogs we use. I like to use Applegate but any hot dogs will work. You could also mix your own cornbread from scratch. I have not tried that yet because usually I’m in a hurry to get lunch made after a long morning of errands or homeschooling. (I’d love to know your favorite recipe if you do use one!)
Once I mix the cornbread as the package directs, I slice up 3 hot dogs into bite sized slices and mix them into the cornbread mix. One package of cornbread mix gives me 12 muffins. The parchment paper liners allow for such an easier time getting them out so I always use those now. I line a 12 muffin pan with the liners and then pour the mix into them as evenly as I can. I start at the latter end of the time suggested on the box, which is about 18 minutes for my preferred mix, but then add in a few minutes to make it probably about 21-23 minutes total. Cook until the tops are slightly golden as the mix most likely states to do. Let them cool, then serve! So easy!

Ingredients:
- Cornbread mix (check for other ingredients needed for your package)
- 3 hot dogs sliced into bite sized pieces
Directions:
- Preheat oven and line 12 muffin pan with liners (parchment paper liners are my suggestion!).
- Mix cornbread mix as stated on package.
- Add in hot dog slices to uncooked cornbread mix.
- Pour cornbread and hot dog mix evenly into cupcake liners.
- Bake as instructed on the cornbread mix until tops are slightly golden brown. For mine, it takes around 20 minutes but your mix may be different so check the recommended times.
- Let cool and enjoy!
